My go-to healthy easy nourish bowl!

Hope everyone is having a good week! I am super excited to share with you guys a yummy vegan nourish bowl that will surely leaving you wanting more! It is packed with lots of different nutrients and will keep you full throughout the day. Nourish bowls definitely have alternatives depending on what you enjoy!


Ingredients:

  • 1 medium sized sweet potato

  • 1 cup of brown basmati rice

  • 1 cup of uncooked spinach

  • 1 cup of orange lentils (dahl)

  • olive oil

  • seasoning - cinnamon, cayenne

Instructions:

Make all 4 components separately then add them together into a bowl.

  1. Start with roasting your sweet potato. Chop it into small bite-size chunks and place onto a baking pan. Then drizzle olive oil and sprinkle some cinnamon and place into a pre-heated oven.

  2. Then start to cook your rice. (either in a stove or in a rice cooker)

  3. To make the orange dahl, you will soak the lentils in water for about 20 minutes then transfer the lentils to a saucepan, and add double amount of water to lentils on the saucepan. Set the heat to high, and allow the lentils to gently simmer, then moving heat to low as water evaporates. Cook the lentils for about 20 minutes.

  4. Then lastly, cook your spinach with some olive oil and water.

  5. Serve all the 4 components into a bowl and enjoy!
